Lanzarote Cuisine

Cuisine in Lanzarote is the same as all of the Canary islands.

Canary Islands local food is a combination of traditional Spanish recipes with an Latin American and African influence.

You can get away from the standard Spanish food, and the many tourist-oriented "international" style restaurants. Because there is a genuine local cuisine. Although It is  a lot easier to find British pub or a fast-food restaurant than a 'Canarian tipico', these are usually distinguished by a short menu of soups, stews and grilled fish dishes.

The basis of Canarian cuisine is a variety of fresh vegetables, fruit and fish. They are generally light meals, that are  more digestible in a warm climate. The traditional island food is gofio, which is a sort of flour that is made from toasted cereals, which is often used as a substitute for bread.

One of the best-known dishes, is the Papas Arrugadas (wrinkled potatoes). These are potatoes that are boiled and salted in their skin. Their real taste comes from the sauces, mojos, which are usually two olive oil-based sauces: the mojo picón, a spicy sauce and the mojo verde, a green sauce.

You  are in Paradise in any of the Canary Islands if you are a fish lover! Some of the main regional recipes are Caldereta and Sancocho Canario, these are salted fish in a Mojo sauce. There is a wide variety of international recipes of fish and seafood, too.

One of the vegetarian dishes is Potaje de Berros, which is  a hot pot of chickpeas, and is perhaps best known.

Probably the favourite dessert which is found more typically is bienmesabe, this is a mixture of honey, almond cream, eggs and rum. Besides that, there is a wide choice of tropical fruits, like mangoes and paw paw. Platanos Fritos and fried bananas. The local goat cheese is invariably good, if you like goats cheese then do not miss out!

The Tapas concept is one of the most important Spanish contributions to the cooking world. This is a light and small piece of food that the Spanish have before either lunch or dinner, but always with a glass of wine or beer!!! The Tapas custom is to have several wines or beers before lunch or dinner, as it hides the appetite (tapa el hambre). Tapas can be presented to you in many ways including as a pincho (with a stick), or as a mini-dish of a traditional recipe!
