The Ibiza resort of Santa Eulalia has two annual Fiesta's, the first is on the 12th February and the second on the 1st Sunday in May. In Santa Eulalia there are many horse and carts with traditional Spanish horses in the proper attire; it is quite spectacular.
I would very much recommend going to a Spanish Fiesta as they really know how to party. A typical fiesta is celebrated annually and usually local businesses close, the roads are blocked off, and a street party is set up with food, drink and music in abundance. People of all ages join the party in singing and dancing. Then in the evening the there is usually a fair ground, and often on the last night there will be a fireworks display. Sometimes there is even a bank holiday the day after the fiesta for the town to recover! Please see below for details:
